Day 5 of Higher Carb Starch Solution: April 18th

Day 5/28

I had a pretty relaxing day of working on my honors thesis (due in a week!) and napping, until I decided to make chocolate zucchini banana bread and go for a 6 mile walk/run at night.

I bought a few too many zucchinis over the weekend, and was in the mood for chocolate and banana bread, so I had to think of a way to combine them… and chocolate zucchini banana bread seemed like the natural choice! I ended up coming up with my own recipe and it turned out deliciously–fudgy on the inside, almost crispy on the outside. Not to mention, it’s fat free and full of veggies! The loaf came out at 5pm, so I ended up having half of it for dinner because it was fantastic straight out of the oven and I didn’t feel like cooking anymore… then it gave me a big energy burst to go for the 6 mile walk/run. So that’s the explanation for my weird dinner 😉

Macros: 82% carbs, 10% protein, 7% fat

Exercise: walked for 45 minutes, ran for 35 minutes (exactly 6 miles total!)


  • Whole wheat chocolate pancakes


  • “Fried” rice with green beans, peas, corn, and shiitake mushrooms


  • Half a loaf of chocolate zucchini banana bread

Calories: 1830 Calories burned: 1900 (from Fitbit HR data)

  1. Awesome Post! I am literally trying to RETRAIN my brain to think that not all carbs are bad!! Which is nice, because I am able to really enjoy my favorite food of all time – potatoes and bananas! Love your posts! 🙂 I look forward to them now!


    1. I used to think carbs were scary too, so I completely understand! I was afraid of all grains for a few years before I snapped out of it… I’m so glad you’re able to enjoy potatoes and bananas too now! (also two of my favorite foods)

      1. Absolutely!! It was brain washed into my mind soooo deeply, so now every day I’m like — okay, I’m about to have brown rice…….and I’m not going to die, or gain 20 pounds because of it. It’s going to be okay! So, I’m taking one step at a time! And being more intuitive about what sounds yummy to eat! (Instead of, can’t have this, can’t have that mind set)
        And you’re welcome! I am trying to find people like you so I can keep going strong on my journey too! 🙂
