Ingredients:
- 1 cup raw carrots
- 5 large medjool dates, pitted
- 1/2 cup rolled oats
- 1/3 cup walnuts
- 1/4 cup shredded sweetened coconut
- 1 tablespoon almond butter
- 1 teaspoon maple syrup (plus more if you like things sweeter, up to one tablespoon)
- 1/4 teaspoon vanilla
- 1/2 teaspoon cinnamon
- Heaping 1/8 teaspoon ginger
- Heaping 1/8 teaspoon nutmeg
- Dry shredded coconut for rolling (I used the sweetened/wet version but dry would turn out better!)
