Day 2 – 11/26

I had a bit of a milestone day: I went to one cafe in the morning with one friend, then another cafe in the afternoon with another friend. The milestone part of it is that both cafes had delicious looking vegan food options, which is incredibly rare, and I resisted them completely–the first had a vegan mozzarella sandwich, and the second had a huge selection of vegan muffins and donuts (a samoa donut, even!). And it wasn’t even difficult!
I’m starting to feel like my old self again, the self that craves things that actually have nutrients. (Because biologically that makes more sense anyway, doesn’t it?)
I did, however, enjoy a lightly sweetened, soy pumpkin spice latte at the first cafe. 🙂
Breakfast:
- 50g mashed butternut squash with cinnamon
- 300g japanese sweet potato
Lunch:
- 300g red potato with 1/4c hummus
- Soy pumpkin spice latte
- Peppermint tea
Dinner:
- 3-4 big carrots, roasted with balsamic vinegar
- 150g red potatoes with 3tbsp hummus
- Butternut squash soup with 200g squash
- Veggie patty (Don lee farms superfood patty)
Night snack:
- 200g steamed japanese sweet potato
