Day 3 – 11/27
I quickly figured out a current favorite whole-foods dessert/decadent-tasting meal: pumpkin pie oats, in the form of pancakes and baked oatmeal! I need to phase out the chocolate chips though…
Exercise: ran 2 miles and walked 2.5 miles
Breakfast:
- Pumpkin chocolate chip oat pancakes (1c oats)
- Coldbrew coffee with soymilk
Lunch:
- Kale salad mix with 300g red potato,1/2 avocado, 2 tbsp pumpkin seeds, 4 tbsp cranberries
Dinner:
- 2 big carrots, roasted
- Boca vegan burger
- Baked pumpkin pie chocolate chip oatmeal (3/4c oats)
