It’s finally happening: I’m back to actively craving vegetables over chocolate and sugar! This morning, instead of my usual sweet potato hot chocolate (which is still pretty darn healthy), I craved a veggie potato hash.
And that breakfast (plus a mocha my friend got for me, so I still ended up having some chocolate and sugar) kept me so satiated, I didn’t even feel like eating again until 3:30pm, when I actually started feeling hungry again. It’s so nice to feel my hunger signals coming back online!
I made pumpkin gingerbread at night for a potluck on Saturday, and I did end up having to taste test quite a bit because I had to keep cutting off the outer portions and putting the insides back in the oven–for some reason my new apartment’s oven just doesn’t bake things as evenly as past ones I’ve used! It did turn out well in the end, though. 🙂
Breakfast:
- Breakfast hash with a big russet potato, mushrooms, broccoli
- Soy mocha
Lunch:
- 4 medium red potatoes with hummus
Dinner:
- Leftover red bean mushroom curry with basmati rice
- Sourdough bread bowl
Late at night:
- Pumpkin gingerbread

I’ve actually been searching for a term to describe the way I eat as a vegan, and it’s definitely ‘intuitive’! I totally believe we should listen to our bodies when they’re shouting out for certain foods.
Also, that chili looks outstanding!
