Thanks so much for helping me hit 1000 followers, everyone! When I first started this blog (formerly called the Skinnyfat Chef) I wasn’t sure if anyone would be interested in my food/fitness journey, let alone a thousand people. And throughout this journey I’ve completely changed: I used to try to do as much cardio as possible while eating as little as possible (and counting each and every calorie), whereas now I lift weights, run for the joy of running and not calorie burn, and eat in abundance with no restriction or calorie counting. And the cherry on top is that I’ve gotten much closer to my ideal body this way. I’m so grateful for your support–you’ve really inspired me to stick to my goals which have done wonders for my health and fitness.

Most importantly, I hope my experiences can be helpful to you in some way or another… even if it’s just learning from the mistakes I’ve made along the way.   😛

Day 40 and 41 (1/03-04) of Back to High Carb Intuitive Eating

Day 40 – 1/03

Today was road trip day, which meant an 8 hour drive from San Diego back up to Davis! I had a goodbye breakfast with a friend in the morning at a new restaurant called Flower Child, then was pretty much powered by bagels and dates for the rest of the drive.

  Exercise: walked 3 miles

Breakfast:

  • Thai dye wrap (tofu, avocado, veggies)
  • Coldbrew coffee with soymilk

Lunch:

  • 2 bagels with tofutti
  • 3 date rolls

Dinner:

  • Handful of crackers
  • 2 red potatoes with hummus

Day 41- 1/04

 

I’m starting to feel the pressure of about a million tasks I have to do, and only a few days until the quarter starts and I have 50 hour weeks. I unpacked and worked on client photo edits all day, then had a photoshoot at night with the loveliest family. They had framed photos in their house from our last photoshoot–it was both surreal and wonderful   🙂

  
 Exercise: walked 4.5 miles

Breakfast:

  • Date roll
  • Bagel with tofutti
  • Coldbrew coffee with soymilk

Lunch:

  • 3 red potatoes with hummus
  • Boca patty

Dinner:

  • Lentils with potato, carrot, peas, corn, spinach, broccoli, and basmati rice

Snacks:

  • 5 date rolls throughout the day

Day 38 and 39 (1/01-02) of Back to High Carb Intuitive Eating

Day 38 – 1/01

I’m addicted to date rolls. And it’s a good thing because they’re delicious, a great snack when on the go, and very high carb. Not to mention, Sprout’s had the pumpkin pie ones on clearance for 99 cents each, so I bought 10 boxes (aka the rest of their stock) since they’ll last til June.  😀

Date rolls call for pulling out all my photography stops

Exercise: walked 5.7 miles

Breakfast:

  • 4 coconut date rolls and a pumpkin pie date roll
  • Slice of toast with pumpkin butter
  • Coldbrew coffee with soymilk

Lunch:

  • Leftover yellow curry with rice
  • 3 date rolls

Dinner:

  • 3 red potatoes with hummus
  • 3 date rolls

Day 39 – 1/02

Went on my last canyon walk of my visit to San Diego. Ever since my parents moved into this house when I was 4, it’s been my favorite place to go… I’m so lucky to have such a natural jewel just across the street. Especially now that I have a dog to appreciate it with!

On the food front, the random sampling of leftovers continues–the assortment of food I called lunch is almost comical, really. I’m trying to clean all my “weird vegan food” out of my parents’ fridge since I won’t be back for 6 months. 😛

Exercise: walked 6 miles

Breakfast:

  • Japanese sweet potato
  • Coldbrew coffee with soymilk

Lunch:

  • 4 chick’n taquitos
  • 1.5 potato bagels
  • Matcha tea
  • Pellegrino

Dinner:

  • Gardein BBQ hot pocket
  • Slice of toast with almond butter

Day 36 and 37 (12/30-31) of Back to High Carb Intuitive Eating

Back to 2-day food diaries like I used to do! I think my posts are getting similar enough that it makes more sense to consolidate them and avoid spamming you as much. 😛

Day 36

Today I had a dinner disaster: I went to an Indian restaurant that a friend and I frequent and ordered potato curry, all seemed well. I started eating the curry, and a few bites in (on top of naan/rice, which is why it took me so long) I noticed that what was supposed to be potato instead seemed a bit mushroom-like and stringy in texture, and didn’t taste nearly as good as potato. I isolated a piece from the curry to get a closer look and realized that it was chicken. I was horrified.

They brought me my correct curry in 3 minutes and gave me a 50% discount, but still. The last time I intentionally ate an animal was over a decade ago when I was 12, and up to this point I’d only had 2 accidents: once 8 years ago biting into a burrito that was supposed to be bean but instead was beef, and another 4 year ago eating half a slice of pizza that was supposed to be mushroom but had pepperoni hiding UNDER the cheese (after which I cried). This is my first accident since I’ve been vegan/in the last 3 years. 😦

The fun part of my day was going to dog beach with another friend, which involved a lot of lovely walking and mirror-like landscapes. 
Exercise: walked 3.5 miles

Breakfast:

  • Banana steel cut oats
  • Coldbrew coffee with soymilk

Lunch:

  • 3 red potatoes with hummus
  • Acai bowl with 3 bananas, granola
  • Leftover fried rice

Dinner:

  • Yellow potato curry, rice, naan

Day 37

My New Year’s Eve was a whirlwind: I managed to see 8 of my San Diego friends in one day, in 3 different groups! I went to the mall with 2 friends in the morning, and while they got lunch, I decided I didn’t feel like restaurant food and got a mocha instead.(And I ate potatoes once I got home, of course.)  I’m feeling more and more like my old intuitive eating self again, where I don’t feel compelled to stuff myself just because other people are eating!

Next was going to a cafe with another friend, where I felt like getting peppermint tea instead of another hot chocolate or something. We also went grocery shopping, where I found the GREATEST SNACK EVER: pumpkin pie date rolls. But more on that next post.

Then I spent the evening with another group of friends, and had chips and guac instead of beer or sangria. A pretty good trade, I’d say! I just wasn’t in a very alcoholic mood despite the occasion.

Exercise: walked 5 miles

Breakfast:

  • 4 slices of bread with pumpkin butter
  • Coldbrew coffee with soymilk

Lunch:

  • Soy mocha
  • 4 small potatoes with hummus
  • Peppermint tea

Dinner:

  • Paella romaine wraps
  • 4 pumpkin pie date rolls

Snack:

  • Chips and guacamole

Day 35 (12/29) of Back to High Carb Intuitive Eating

I had an uncharacteristically snack-y day: lunch and dinner were made up of a series of seemingly random foods. I suppose that’s the post-Christmas effect of having to use up a lot of leftovers, both from what I’ve made (paella) and restaurants (Sipz). I’m really, really looking forward to heading back to Davis and being able to eat simply.

The thought of eating nothing but potatoes for a day sounds ridiculously appetizing right now after all this random/rich food  😛


Exercise: walked 4 miles

Breakfast:

  • Potato veggie hash
  • Date
  • Coldbrew coffee with soymilk

Lunch:

  • 1/3 Japanese sweet potato
  • Sipz leftovers: tiny bowls of tom kha, fried rice
  • Granola and chocolate chips
  • Chai tea

Dinner:

  • 3 slices sourdough bread with pumpkin butter
  • Paella romaine wraps
  • Pear

Day 34 (12/28) of Back to High Carb Intuitive Eating

I was watching some vegan youtubers and got inspired to make beans on toast for the first time, because they make it look so good. I combined navy beans, tomato paste, onion, garlic, and molasses to make British style baked beans, then had it on toasted sourdough. It was delicious, and I ate an entire can of beans!

Exercise: walked 3.5 miles

Breakfast:

  • Purple sweet potato
  • Slice of toast with cherry butter
  • Coldbrew coffee with soymilk

Lunch:

  • Beans on toast
  • Date
  • Chai tea

Dinner:

  • Burrito with beans, onions, bell peppers, rice

Day 33 (12/27) of Back to High Carb Intuitive Eating

Today was a bit of a crazy restaurant day because I spent the day out and about with my brother and sister in law. We went for a short hike in the morning, and since they’re into beer we went to a pub for lunch. I rarely drink, but I got a strawberry lambic at their suggestion and it was great–it tasted like fruit juice!


After the pub we got boba since the place next door happened to be one of the best boba places in town. At night, we had our yearly holiday tradition of going to my favorite vegan restaurant with some friends and one of our high school teachers. We ordered a bunch of dishes to share family style, and while I didn’t eat myself sick, I did eat past satiation. I still have a lot of work to do!

 

Exercise: hiked 2.5 miles, walked 2 miles

Breakfast:

  • Purple sweet potato
  • Slice of toast with cherry butter
  • Coldbrew coffee with soymilk

Lunch:

  • Strawberry Lambic and fries
  • Taro “milk”tea

Dinner:

  • Vegan drumsticks, sushi, yellow curry, tom kha, fried rice, noodles
  • Banana coconut cake

Day 32 (12/26) of Back to High Carb Intuitive Eating

My family tends to make every meal a big deal, when possible. They made buttermilk pancakes for breakfast, so I decided to make one of my own to try to fit in–double chocolate oat pancakes with banana!

At dinner they brought home Mediterranean food, so I had some bits of that along with my veggie paella. Not ideal, but a better compromise than just eating all restaurant food in my mind. I’m looking forward to going back to Davis where everything is simpler!

Exercise: walked 2.5 miles

Breakfast:

  • Double chocolate oat pancake
  • Coldbrew coffee with soymilk

Lunch:

  • Big kale salad with red potato, avocado, dried cranberries
  • Peppermint tea

Dinner:

  • Slice of bread with cherry butter
  • Veggie paella
  • Pita and baba ghanouj, hummus, bit of falafel

Night snack:

  • 2 slices of bread, one with hazelnut butter and one with cherry butter

Day 31 (12/25) of Back to High Carb Intuitive Eating

Similar to Christmas Eve, I also somehow managed to eat high carb and clean on Christmas Day! I think the key was making sure to have plenty of quick to make/eat food on hand, and to have a plan for what I wanted to cook. In this case I baked a purple sweet potato the night before to have for breakfast. I also made the same fat-free veggie paella I’d made for the potluck a few weeks ago, and had it for lunch and dinner–it was so good I wanted it for both meals anyway!

Exercise: ran 2 miles, walked 2.5 miles

Breakfast:

  • Purple sweet potato
  • 2 slices bread with pumpkin butter
  • Homemade mocha

Lunch:

  • Veggie paella
  • Handful of granola

  • Purple sweet potato
  • Pear

Day 30 (12/24) of Back to High Carb Intuitive Eating

I somehow managed to stick to high carb/mostly whole foods on Christmas Eve! The fact that everyone else was eating apple tarts and gingerbread for dessert would have usually triggered cravings in me (and led to some kind of feverish baking, or eating almond butter and chocolate chips), but I was content after my dinner of potatoes and Brussels sprouts. 

I think that’s a sign this challenge is working  🙂  It was wonderful to be able to enjoy the night without thinking about food! 

And my Hasselback potatoes were a hit with everyone, I love how easy they are to make!

 

Exercise: walked 4 miles

Breakfast:

  • Potato hash with broccoli and mushrooms
  • 2 dates
  • Coldbrew coffee with soymilk

Lunch:

  • Big kale salad with red potatoes, avocado, pumpkin seeds, cranberries, balsamic
  • 2 slices sourdough with pumpkin butter

Dinner:

  • Hasselback potatoes (aka baked yukon golds), brussels sprouts and onions, bread roll
  • Chardonnay
